How do I successfully manage an event?
seeking advice on how to make an event successful at a restaurant and bar... how to attract people, get them to return and ensure sustainability.

Get a good DJ that can bring his/her crowd. Don't worry much about inviting guys, just invite a lot of girls.
You could have a menu of exotic food just for the night, something which isn't available around, and continue the trend in further such events to ensure sustainability.
What kind of event is it? Giveaways are always popular, or even "anyone who shows up is entered in a drawing for..."
